Description
A delightful and refreshing twist on a traditional favorite. This crisp broccoli salad combines the earthy crunch of fresh florets with savory, smoked turkey bacon and sweet raisins, all bound in a creamy, tangy dressing made with avocado oil mayonnaise and apple cider vinegar. It is a perfect, nutrient-dense side dish that bridges the gap between indulgent comfort food and wholesome nutrition, making it a crowd-pleasing addition to any picnic or backyard barbecue.
Ingredients
8 cups broccoli florets, chopped into bite-sized pieces
1/3 cup red onion, finely chopped
1/2 cup oil-free raisins
6 slices smoked turkey bacon, cooked until crispy and crumbled
1 cup avocado oil mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup
1/4 teaspoon sea salt
1/8 teaspoon black pepper
Instructions
In a large mixing bowl, combine the chopped broccoli florets, finely chopped red onion, raisins, and crumbled turkey bacon.
In a separate small bowl, whisk together the avocado oil mayonnaise, apple cider vinegar, honey or maple syrup, salt, and pepper until smooth and well-combined.
Pour the dressing over the broccoli mixture and toss thoroughly until every piece is evenly coated.
Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the broccoli to soften slightly.
Give the salad a final toss before serving chilled.
Notes
This salad tastes even better the next day as the dressing marinates the vegetables. Feel free to add sunflower seeds for extra crunch or a touch of Greek yogurt for a lighter dressing consistency. Ensure the turkey bacon is fully cooked and crispy to mimic the textural contrast of the classic version.
