Ingredients
1 tablespoon extra virgin olive oil
1 medium yellow onion, finely chopped
1 lb organic ground beef
4 cloves garlic, minced
1/2 teaspoon sea salt
1/4 teaspoon cracked black pepper
28 oz crushed tomatoes
4 cups beef broth (halal certified)
8 oz lasagna noodles, broken into pieces
1 cup cottage cheese
1/2 cup grated parmesan cheese
1/4 cup fresh basil leaves, chopped
Instructions
Heat olive oil in a large pot over medium heat.
Add the onion and cook until translucent, about 5 minutes.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Stir in the minced garlic, salt, and pepper, cooking for another minute until fragrant.
Pour in the crushed tomatoes and beef broth, stirring to combine.
Bring the mixture to a simmer, then add the broken lasagna noodles.
Cook for 10-12 minutes or until noodles are tender, stirring occasionally to prevent sticking.
Remove from heat and stir in the cottage cheese and parmesan until creamy.
Garnish with fresh basil and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of broth when reheating as the noodles will continue to absorb liquid over time.
