Ingredients
1/2 cup finely diced onion
1/2 cup finely diced carrots
1/2 cup finely diced celery
3 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups low-sodium chicken broth
1 cup cooked wild rice blend
2 cups cooked shredded chicken breast
1 cup whole milk
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley
Salt and black pepper to taste
Instructions
In a large pot, melt the butter over medium heat.
Add the onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
Stir in the flour and cook for 1-2 minutes to create a light roux.
Slowly whisk in the chicken broth until smooth and bring to a simmer.
Add the cooked wild rice, shredded chicken, thyme, and parsley.
Reduce heat to low and simmer for 15 minutes to allow flavors to meld.
Stir in the milk and heat through until the soup is creamy and warmed.
Season with salt and pepper to taste before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. The wild rice will continue to absorb liquid, so you may need to add a splash of milk or broth when reheating.
