Description

This salad combines creamy cottage cheese, hearty chickpeas, and crisp vegetables tossed in a zesty lemon dressing. Nutritious, protein-packed, and satisfying, it’s a perfect healthy lunch option.


Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

Instructions

1. In a large mixing bowl, combine the cottage cheese, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.

2. In a small bowl, whisk together the lemon juice, olive oil, ground cumin, salt, and pepper until well combined.

3. Pour the dressing over the salad ingredients and toss gently until evenly coated.

4. Taste and adjust seasoning with additional salt or pepper if needed.

5. If desired, line a serving platter or individual plates with lettuce leaves.
