Ingredients
2 large cucumbers, thinly sliced
1/2 cup sour cream or plain Greek yogurt
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 clove garlic, minced
1/4 cup finely chopped fresh dill
1/4 cup finely chopped fresh parsley
1 tablespoon finely chopped fresh chives
Salt and freshly ground black pepper, to taste
Instructions
Thinly slice the cucumbers and place them in a mixing bowl.
In a small bowl, whisk together sour cream (or Greek yogurt), lemon juice, Dijon mustard, and minced garlic.
Stir in the chopped fresh herbs. Season with salt and pepper to taste.
Pour the dressing over the cucumbers and gently toss to coat evenly.
