Description
Tender, golden chicken thighs in a rich garlic mushroom cream sauce. A comforting, indulgent one-skillet dish perfect for cozy evenings or casual gatherings.
Ingredients
4 chicken thighs (bone-in, skin-on)
2 cups cremini mushrooms, sliced
4 cloves garlic, minced
2 tbsp all-purpose flour
2 tbsp olive oil
1/4 cup unsalted butter
1 cup heavy cream
1/2 cup vegetable broth
1 tsp dried thyme
Pinch of nutmeg
1 tbsp Dijon mustard
Salt and black pepper
Instructions
Preheat oven to 400°F (200°C)
Season chicken with salt and pepper
Heat olive oil and 1 tbsp butter in a skillet; sear chicken 3-4 minutes per side
Remove chicken; add mushrooms and garlic to the skillet, sauté 5-7 minutes
Blend in flour to thicken, stir in broth, heavy cream, thyme, nutmeg, and remaining 1 tbsp butter
Return chicken to skillet, spoon sauce over
Transfer to oven, bake 20-25 minutes until fully cooked
Notes
Use cremini/mushrooms/substitute baby bella mushrooms
Dijon mustard adds tang; choose alcohol-free version if needed
Store in airtight containers up to 3 days
Serve with mashed potatoes or crusty bread for soaking up sauce
