2 cups cooked turkey, cubed
2 cups baby kale
1 red onion, finely diced
1 cup baby bella mushrooms, thinly sliced
1 cup celery, chopped
8 ounces cream cheese, softened
6 cloves garlic, thinly sliced
2 tablespoons all-purpose flour
2 tablespoons butter
3 cups chicken broth
1/2 cup non-alcoholic white grape juice
1 teaspoon fresh thyme, chopped
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder


Instructions

Place a Dutch oven over medium heat and melt the butter.
Add the red onion, celery, and sliced mushrooms to the butter and sauté until softened.
Stir in the garlic and cook until fragrant.
Sprinkle the flour over the vegetables and stir well to coat, cooking for 1 minute.
Deglaze the pot with the non-alcoholic white grape juice, scraping any bits from the bottom.
Slowly whisk in the chicken broth until the mixture is smooth.
Stir in the onion powder, thyme, salt, and pepper, and bring to a gentle simmer.
Add the softened cream cheese and whisk until fully incorporated and the soup is creamy.
Add the cooked turkey and heat through.
Stir in the baby kale and cook just until wilted before serving.
