Ingredients
4 boneless, skinless chicken breasts
1 cup fresh peach slices (approximately 2–3 peaches)
3 tablespoons Dijon mustard
1 cup fat-free half-and-half
1 tablespoon whipped butter
1 teaspoon dried thyme
2 cloves garlic, minced
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375°F (190°C)
Pat chicken breasts dry and season with salt and pepper
Heat vegetable oil in a large skillet over medium-high heat and sear chicken for 4-5 minutes per side until golden
Transfer chicken to oven and bake for 15-20 minutes until thoroughly cooked
Meanwhile, in a blender, purée peaches with garlic, thyme, salt, pepper, and Dijon mustard
Pour peach mixture into a saucepan and cook over medium heat for 5 minutes, then stir in fat-free half-and-half and whipped butter until smooth
Drizzle sauce over chicken before serving
Notes
Use ripe peaches for optimal sweetness
Add a splash of halal-approved apple cider vinegar if desired instead of wine
Sauce can be prepared in advance and reheated gently
