Description
Crispy roasted cauliflower tossed with garlic, Parmesan, lemon, and parsley for a flavorful appetizer or side dish with irresistible texture.
Ingredients
- 1 medium head cauliflower, cut into florets (about 8 cups)
- 3 tablespoons extra-virgin olive oil
- 1.5 teaspoons paprika
- 0.75 teaspoon kosher salt
- 0.5 teaspoon cracked black pepper
- 3 cloves garlic, minced
- 2–3 tablespoons grated Parmesan cheese
- Juice of 1/2 lemon
- 2 tablespoons fresh parsley, finely chopped
Instructions
1. Place a large rimmed baking sheet on the center rack of the oven and preheat the oven to 450°F.
2. Cut the cauliflower into small florets and place them in a large bowl.
3. Toss the cauliflower with olive oil, paprika, salt, and black pepper until evenly coated.
4. Carefully spread the cauliflower onto the preheated baking sheet in a single layer, avoiding overcrowding.
5. Roast for 20–25 minutes, tossing once halfway through, until lightly charred and tender.
6. Sprinkle minced garlic and Parmesan cheese over the cauliflower and return it to the oven for 5 more minutes.
7. Remove from the oven, drizzle with lemon juice, and garnish with fresh parsley before serving.
Notes
Customize the flavor by adding chili flakes, smoked paprika, or different cheeses.
Store leftovers in an airtight container in the refrigerator for up to three days.
Reheat in the oven or air fryer to restore crispiness.
