A vibrant crispy rice salad packed with fresh herbs, crunchy vegetables, and tossed in a bold maple-tahini ginger dressing for a satisfying gluten-free meal.
Ingredients
- 2 cups cooked white rice (leftover or cooked and cooled)
- 1 tablespoon soy sauce or coconut aminos
- 1 tablespoon sesame oil
- 1–2 teaspoons chili crunch or sriracha
- 2–3 cups shredded red cabbage
- 3 mini cucumbers, sliced
- 1 cup edamame (10 oz frozen), steamed and shelled
- 1/4 cup chopped green onions (about 4–5), thinly sliced
- 1/3 cup cashews, chopped
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon fresh mint, chopped
- Maple Tahini Ginger Dressing:
- 1/4 cup tahini
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon chili crunch or sriracha
- 2 tablespoons maple syrup
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon mirin or rice vinegar
- 1 tablespoon soy sauce or coconut aminos
Instructions
1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
2. In a medium bowl, combine the cooked rice, soy sauce, sesame oil, and chili crunch. Stir until the rice is evenly coated.
3. Spread the rice in an even layer on the prepared baking sheet. Bake for 30–35 minutes, stirring every 10 minutes, until golden and crispy. Watch closely during the last 10 minutes to prevent burning.
4. While the rice bakes, prepare the dressing by whisking together tahini, sesame oil, grated ginger, chili crunch, maple syrup, lime juice, mirin, and soy sauce until smooth. Adjust seasoning to taste.
5. In a large bowl, combine the shredded cabbage, sliced cucumbers, edamame, green onions, cashews, cilantro, and mint.
6. Add the crispy rice to the salad and pour the dressing over the top.
7. Toss everything gently until well coated and serve immediately for best texture.
Notes
Add sliced avocado or crushed peanuts for extra texture and flavor.
Jasmine, basmati, long-grain white rice, or brown rice all work well in this recipe.
For added protein, top with shredded rotisserie chicken, blackened salmon, spicy tuna, shrimp, or crispy tofu.
