Description

2 lbs boneless, skinless chicken breasts
1 cup yellow onion, finely diced
1 packet ranch seasoning mix
1 tbsp taco seasoning
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can corn, drained
1 cup chicken broth
4 oz cream cheese, softened


Instructions

Place the chicken breasts in the bottom of the slow cooker.
Add the diced onion, black beans, and corn on top of the chicken.
Sprinkle the ranch seasoning and taco seasoning evenly over the mixture.
Pour the chicken broth over the ingredients.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
Once tender, remove the chicken and shred it with two forks.
Return the shredded chicken to the pot, add the softened cream cheese, and stir until creamy and well combined.
Continue to heat for another 20 minutes until the sauce is smooth and hot.


Notes

Ensure chicken breasts are similar in size for even cooking. For a lower sodium version, opt for reduced-sodium broth and seasoning packets. Leftovers store well in an airtight container for up to 3 days.
