Description

Ingredients

2 to 2 1/2 lbs boneless chuck roast, trimmed and cut into 12 inch pieces
1 1/2 tsp kosher salt
1 tsp cracked black pepper
2 Tbsp avocado or vegetable oil
12 oz non-alcoholic dark malt beverage
3 cups low-sodium beef broth
3 carrots, peeled and cut into 2 inch pieces
2 parsnips, peeled and cut into 1 inch pieces
1 1/4 lb baby Yukon gold potatoes, halved or quartered
1 yellow onion, diced
5 cloves garlic, minced
2 tsp fresh sage, minced
2 Tbsp beef base
2 Tbsp tomato paste
12 Tbsp prepared horseradish
1 Tbsp softened organic butter
1 Tbsp all-purpose flour


Instructions

In a large skillet, heat oil over medium-high heat and sear the beef pieces until browned on all sides, then transfer to the crockpot.
Add the onion, garlic, carrots, parsnips, and potatoes to the crockpot.
In a small bowl, whisk together the beef broth, non-alcoholic dark malt, beef base, tomato paste, and fresh sage; pour over the beef and vegetables.
Cover and cook on low for 7-8 hours or on high for 4-5 hours until the meat is fork-tender.
In a small bowl, mash the butter and flour together to create a paste (beurre manié).
Stir the butter-flour paste and prepared horseradish into the stew, allowing it to thicken the sauce for an additional 15-20 minutes on high before serving.


Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator. The flavors often deepen overnight, making it even better as a next-day lunch. If you prefer a thicker stew, you can add an extra teaspoon of flour mixed with cold water.
