Description

This soulful, slow-cooked chicken noodle soup is the ultimate comfort food for busy days. By gently simmering tender chicken breasts with fresh carrots, celery, aromatic garlic, and earthy herbs in a flavorful broth, you create a restorative and nutrient-dense meal without any active monitoring. It is a perfect dish for maintaining a mindful, healthy lifestyle, offering warmth and nourishment in every spoonful while saving you precious time in the kitchen.

Ingredients

Scale

1.5 pounds boneless skinless chicken breasts, trimmed
1 large yellow onion, finely diced
3 large carrots, peeled and sliced into coins
2 ribs celery, sliced
3 cloves garlic, minced
0.5 teaspoon dried thyme leaves
0.5 teaspoon dried rosemary
0.5 teaspoon kosher salt
0.25 teaspoon black pepper
1 bay leaf
2 teaspoons chicken bouillon (halal certified)
8 cups water or low-sodium chicken stock
8 ounces egg noodles

Instructions

Place the chicken breasts, onion, carrots, celery, and garlic into the base of your slow cooker.
Add the dried thyme, rosemary, salt, pepper, and the bay leaf to the vegetables.
Dissolve the chicken bouillon in the water or stock and pour the liquid over the ingredients until everything is just covered.
Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender.
Remove the chicken breasts, shred them using two forks, and return the meat to the slow cooker.
Add the egg noodles directly to the pot, stir, and cook on high for an additional 15 to 20 minutes until the noodles are soft.
Discard the bay leaf and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. If the noodles absorb too much broth upon reheating, add a splash of water or stock before warming. You can also cook the noodles separately on the stovetop and add them to individual bowls to keep the soup from thickening too much if you plan on freezing it.
