Ingredients
1 large onion, thinly sliced
2 lbs boneless, skinless chicken breasts
2 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground turmeric
1 tsp ground cinnamon
1 tsp smoked paprika
4 minced garlic cloves
1 tsp salt
1 tsp ground black pepper
2 tbsp olive oil
Juice of 1 lemon
Instructions
Combine cumin, coriander, turmeric, cinnamon, smoked paprika, garlic, salt, and pepper in a bowl
Place chicken breasts in crockpot and add spice mixture; coat evenly
Layer sliced onion over chicken and pour olive oil to keep it moist
Cook on low for 8 hours
Shred chicken with two forks or a spatula
Stir in lemon juice before serving
