6 cups turkey-based bone broth
1 pound dried Great Northern beans, rinsed
3 large carrots, diced
2 stalks celery, chopped
1 small yellow onion, minced
3 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 bay leaf
1 large meaty turkey ham bone
Fresh parsley for garnish


Instructions

Place the rinsed Great Northern beans into the crockpot.
Add the diced carrots, celery, onion, and minced garlic.
Place the turkey ham bone or shank in the center of the mixture.
Pour the turkey-based bone broth over the ingredients until well combined.
Add the salt, black pepper, and bay leaf.
Cover the crockpot and cook on low for 8 hours or high for 4 hours until the beans are tender.
Remove the turkey bone, pull the meat from the bone, chop it, and return the meat to the soup.
Discard the bay leaf.
Serve warm, garnished with fresh minced parsley.


Notes

Soaking the beans in cold water overnight before cooking can help reduce cooking time and improve digestibility. To store, keep in an airtight container in the refrigerator for up to 4 days, or freeze for up to 2 months. The soup will thicken as it cools; simply add a splash of broth or water when reheating.
