Description

A tender, tenderizes chicken dish with broccoli in a sweet honey-garlic sauce. Slow-cooked for maximum flavor, this comforting meal is perfect for busy weeknights or family dinners.


Ingredients

Scale

2 lbs boneless chicken thighs
4 cups broccoli florets
1/2 cup honey
1/3 cup soy sauce (low sodium)
1/2 cup chicken broth
4 cloves garlic, minced
2 tbsp rice vinegar
1 tbsp cornstarch
2 tbsp water
1 tsp grated ginger (optional)


Instructions

1. Place chicken thighs in a crockpot.
2. In a bowl, mix honey, soy sauce, chicken broth, garlic, vinegar, and ginger (if using). Pour over the chicken.
3. Cook on low for 6-8 hours or high for 4-5 hours.
4. Add broccoli florets 30 minutes before the end of cooking.
5. In a small bowl, whisk cornstarch with water to make a slurry.
6. Add the slurry to the crockpot and stir. Cook 10 more minutes on low to thicken the sauce.


Notes

Use skinless thighs for reduced fat.
Adjust honey based on sweetness preference.
For gluten-free option, use tamari instead of soy sauce and cornstarch-free thickener.
Freeze leftovers up to 3 months.
