4 medium boneless, skinless chicken breasts
2 large carrots, peeled and diced
2 stalks celery, diced
6 cloves garlic, minced
1 cup orzo pasta
6 cups chicken broth
1 teaspoon Italian seasoning
1 tablespoon dried basil
2 tablespoons fresh lemon juice
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

Place the chicken breasts, diced carrots, celery, and minced garlic into the crockpot.
Add the Italian seasoning, dried basil, salt, and pepper over the ingredients.
Pour in the chicken broth and cover with the lid.
Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
Remove the chicken breasts and shred them using two forks.
Return the shredded chicken to the pot and stir in the dry orzo pasta.
Cover and cook for an additional 20-30 minutes until the orzo is soft.
Stir in the fresh lemon juice just before serving.
Garnish with fresh parsley and serve hot.


Notes

If the soup becomes too thick as the orzo absorbs the broth, add an extra cup of warm broth before serving. You can also toast the orzo in a pan with a little olive oil before adding it to the pot for a nuttier flavor profile.
