This Honey BBQ Chicken Rice combines sweet honey and smoky BBQ sauce with tender chicken, fluffy rice, and vegetables for a quick, hearty, family-friendly meal ready in about 30 minutes.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (frozen or fresh)
- Chopped green onions or parsley for garnish
Instructions
1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
2. Heat a little oil in a large skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove from the pan and set aside.
3. Add the uncooked rice to the same pan and toast for 1–2 minutes, stirring to prevent sticking.
4. Pour in the chicken broth, BBQ sauce, and honey, stirring well to combine.
5. Return the chicken to the pan, nestling it into the rice mixture. Bring to a gentle boil.
6. Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and the chicken is fully cooked.
7. Add the mixed vegetables, cover again, and cook for an additional 5 minutes.
8. Fluff the rice with a fork, garnish with chopped green onions or parsley, and serve hot.
Notes
Use chicken thighs for extra juiciness or chicken breasts for a leaner option.
