Description

A vibrant and creamy Street Corn Salad made with charred corn, Greek yogurt, cotija cheese, lime, and fresh herbs for a lighter twist on classic Mexican street corn.


Ingredients

  • 4 fresh corn ears or 16 oz frozen corn, thawed
  • 1/3 cup fresh chopped cilantro
  • 1/4 cup cotija cheese, crumbled
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and chopped
  • 1/2 cup red onion, finely chopped
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • Olive oil for brushing corn (if grilling)

Instructions

1. If using fresh corn, husk the ears and preheat a grill to medium-high heat. Brush corn lightly with olive oil and grill for about 2 minutes per side until lightly charred. Let cool slightly, then cut the kernels off the cob into a large bowl. If using frozen corn, thaw and drain well or sauté in a skillet over medium heat until warmed through.

2. Add the chopped red onion, minced garlic, jalapeño, and crumbled cotija cheese to the bowl with the corn. Toss to combine.

3. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, paprika, sea salt, black pepper, and chopped cilantro until smooth.

4. Drizzle the dressing over the corn mixture and toss well until evenly coated.

5. Garnish with extra cilantro and cotija cheese if desired. Serve immediately while slightly warm or chill in the refrigerator before serving.


Notes

This salad can be served warm or cold depending on preference.

Adjust jalapeño and chili powder to control the spice level.

For extra smokiness, add a pinch of smoked paprika.

Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days.

You can substitute feta cheese if cotija is unavailable.
