Description

Transform humble ingredients into a sophisticated, wholesome dinner without the need for takeout. This slow-cooked beef and broccoli dish features tender cuts of round steak marinated in a savory blend of garlic, soy sauce, and beef broth. Perfect for busy weeknights, this recipe offers a balanced, high-protein meal that fills your kitchen with comforting aromas while saving you time and effort. It is a mindful and nourishing solution for those seeking a restaurant-quality meal in the convenience of their own home.

Ingredients

Scale

2 pounds round steak, cut into bite-size pieces
1 cup low sodium beef broth
1/2 cup low sodium soy sauce
1 tablespoon fresh minced garlic
1/3 cup brown sugar
2 tablespoons sesame oil
4 cups fresh broccoli florets
2 tablespoons cornstarch (for thickening, optional)

Instructions

Place the bite-size pieces of round steak into the base of the slow cooker.
In a medium bowl, whisk together the beef broth, soy sauce, minced garlic, brown sugar, and sesame oil.
Pour the sauce mixture over the beef and stir to ensure the meat is well coated.
Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the beef is tender.
About 30 minutes before serving, stir in the fresh broccoli florets.
If using cornstarch to thicken, whisk it with two tablespoons of water and stir into the slow cooker during the final 20 minutes of cooking.
Serve hot, ideally over steamed brown rice or quinoa.

Notes

Ensure you don’t overcook the broccoli so it retains a crisp-tender texture. You can garnish with toasted sesame seeds or sliced green onions for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
