Description
Quick and flavorful grilled zucchini cooked on a Blackstone griddle with garlic, avocado oil, and Italian herbs for a simple, healthy side dish.
Ingredients
- 2 medium zucchini, sliced into 2-inch pieces
- 1/4 cup avocado oil (or another high smoke point oil)
- 2 garlic cloves, minced
- 1 teaspoon Italian herb blend
- 1/2 teaspoon coarse salt
- 1/8 teaspoon ground black pepper
Instructions
1. Wash the zucchini thoroughly under cold running water to remove any dirt.
2. Slice each zucchini into 2-inch pieces, keeping them as uniform as possible so they cook evenly.
3. Place the zucchini pieces in a large resealable bag or mixing bowl.
4. Add the avocado oil, minced garlic, Italian herb blend, coarse salt, and black pepper.
5. Toss or shake until the zucchini is evenly coated with oil and seasonings.
6. Preheat a Blackstone grill or large skillet to medium-high heat.
7. Spread the seasoned zucchini in a single layer on the hot grill.
8. Cook for 2–3 minutes, flip the pieces, and cook another 1–2 minutes until the zucchini is tender but still slightly firm.
Notes
Avoid overcrowding the grill so the zucchini sears instead of steaming.
You can substitute olive oil or another high smoke point oil if avocado oil is unavailable.
For extra flavor, finish with grated parmesan, fresh herbs, or a squeeze of lemon juice.
