Ingredients
1 pound spicy Italian turkey or chicken sausage (ground)
4 tablespoons butter
1/2 white onion, finely diced
1 tablespoon fresh minced garlic
6 cups organic chicken broth
2 cups filtered water
4–5 yellow potatoes, chopped into 1-inch pieces
3 teaspoons sea salt
1 teaspoon freshly cracked black pepper
2 cups heavy cream
4 cups fresh kale, stems removed and leaves chopped
Instructions
In a large pot, brown the sausage over medium-high heat until fully cooked; remove and set aside.
Add butter to the pot and sauté the diced onion until translucent.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and filtered water, then add the potatoes.
Bring the liquid to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Stir in the cooked sausage, heavy cream, and chopped kale.
Simmer for another 5 minutes until the kale is wilted and the soup is heated through.
Adjust seasoning with sea salt and black pepper before serving.
Notes
Ensure you remove the casings from the sausage before cooking to get a crumble texture. If you prefer a lighter soup, you can substitute the heavy cream with half-and-half or evaporated milk. Leftovers store well in the refrigerator for up to 3 days; simply reheat gently on the stovetop.
