Description

A vibrant, no-cook salad blending ripe peaches, juicy watermelon, and fresh mint with a zesty citrus-olive oil dressing. Hydrating, sweet, and packed with vitamins A & C, this gluten-free vegan salad is perfect for picnics, barbecues, or a refreshing standalone snack.


Ingredients

3 ripe peaches (sliced into wedges or cubes)
4 cups cubed seeded watermelon
1/4 cup fresh mint leaves (chopped)
Juice of 2 lemons or limes
1 tbsp extra-virgin olive oil
Pinch of freshly ground black pepper


Instructions

Slice peaches and watermelon into bite-sized pieces
Add to a large mixing bowl with mint leaves
Drizzle with lemon/lime juice and olive oil
Toss gently to combine
Sprinkle black pepper over the salad
Chill for 20 minutes before serving for best flavor
