Description

This hearty and nourishing taco soup is the perfect blend of a classic bowl of chili and a traditional taco bar. 1 tablespoon olive oil
1 1/2 pounds ground beef
1 large yellow onion, chopped
2 fresh jalapenos, diced (seeds and membranes removed)
4 cloves garlic, minced
2 tablespoons chili powder
2 teaspoons cumin
2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon cracked black pepper
4 cups high-quality beef bone broth
15.5-ounce can black beans, drained and rinsed
15.5-ounce can pinto beans, drained and rinsed
14.5-ounce can petite diced tomatoes
10-ounce can diced tomatoes with green chilies
8-ounce can tomato sauce
2 cups frozen sweet corn
1/3 cup fresh cilantro, chopped


Instructions

Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Add the chopped onion and diced jalapenos; cook until softened, about 5-7 minutes.
Stir in the minced garlic, chili powder, cumin, and oregano, cooking for 1 minute until fragrant.
Pour in the beef bone broth, tomatoes, tomato sauce, and both types of beans.
Bring the mixture to a gentle boil, then reduce heat to low and simmer for 20 minutes to allow flavors to meld.
Stir in the frozen corn and cook for an additional 5 minutes.
Season with salt and pepper to taste.
Serve warm, topped with fresh cilantro.


Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. You can also freeze this soup for up to 3 months. Customize with toppings like avocado slices, shredded cheddar, or a dollop of sour cream.
