Description

This Fiesta Shrimp Rice Bowl is a quick and flavorful weeknight dinner made with zesty marinated shrimp, fluffy rice, and fresh toppings. Ready in just 15 minutes, it’s healthy, customizable, and packed with bold taco-inspired flavors.

  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons lime juice (about 1 large lime)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (more for extra spice)
  • 2 tablespoons fresh chopped cilantro
  • 1 lb raw shrimp, peeled and deveined
  • Shrimp Rice Bowl
  • 2 cups uncooked white rice (or quinoa, brown rice, or lettuce)
  • 1/4 cup diced red onion
  • 1/2 cup diced cherry tomatoes
  • 1 jalapeno, sliced (optional)
  • Fresh chopped cilantro
  • 1 large avocado, sliced
  • 1 (15 ounce) can fire roasted corn, drained
  • Homemade creamy jalapeno ranch or store-bought cilantro ranch, for serving

Instructions

1. Start by marinating the shrimp. Add the olive oil, lime juice, spices, and cilantro to a medium bowl. Pat the shrimp dry, then add it to the marinade and toss to fully coat. Cover and marinate in the fridge for 15 minutes.

2. While the shrimp marinates, cook the rice according to package instructions. Divide the cooked rice evenly among four bowls and top with red onion, cherry tomatoes, jalapeno, cilantro, avocado, and corn.

3. Heat a large skillet over medium-high heat. Once hot, add the shrimp in an even layer and cook for 2–3 minutes on one side. Flip and cook for another 2–3 minutes, until the shrimp are opaque, pink, and form a loose “C” shape.

4. Remove the shrimp from the heat and toss in any remaining sauce from the pan.

5. Add the cooked shrimp to each bowl. Top with extra lime juice, fresh cilantro, and creamy cilantro ranch if desired. Serve immediately.


Notes

To meal prep, follow the directions completely and divide into four airtight containers. Serve cold or reheated for easy lunches or dinners.

For a dairy-free creamy cilantro lime jalapeno dressing, blend all dressing ingredients together in a food processor until smooth.
