Description

Crispy roasted cauliflower tossed in garlic, olive oil, and Parmesan cheese, then baked until golden and flavorful. This easy side dish is savory, slightly nutty, and perfect for weeknight dinners.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon fresh parsley, chopped
  • Red pepper flakes (optional)
  • Lemon zest (optional)
  • Toasted pine nuts (optional)
  • Panko breadcrumbs (optional)
  • Balsamic glaze (optional)
  • Extra grated Parmesan for serving
  • Fresh lemon wedges for serving

Instructions

1. Remove the leaves and core from the cauliflower and cut it into evenly sized bite-sized florets

2. Rinse the florets under cold water and dry thoroughly with a kitchen towel or paper towels

3. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or foil

4. In a large bowl combine olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper

5. Add the cauliflower florets to the bowl and toss until evenly coated with the garlic oil mixture

6. Sprinkle Parmesan cheese over the cauliflower and toss again so the florets are lightly coated

7. Spread the cauliflower in a single layer on the prepared baking sheet with space between pieces

8. Roast for 25–30 minutes, tossing halfway through, until golden brown with crispy edges

9. Remove from the oven and transfer to a serving dish

10. Garnish with chopped parsley and extra Parmesan and serve with lemon wedges if desired


Notes

For extra crunch, sprinkle panko breadcrumbs or toasted pine nuts over the cauliflower before roasting.

Add red pepper flakes for a bit of heat or lemon zest for brightness.

Make sure the cauliflower is completely dry before roasting so it crisps instead of steaming.

Serve immediately for the best texture and flavor.
