Description

2 lbs. beef chuck, cut into 1 inch pieces
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
1 large white onion, diced
2 stalks celery, cut into 1/2 inch pieces
1 lb. Yukon gold potatoes, cut into 1/2 inch to 1 inch cubes
3 large carrots, cut into 1/2 inch pieces
32 fluid ounces gluten-free beef broth
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 tablespoons tomato paste
1 tablespoon gluten-free Worcestershire sauce
2 cloves garlic, minced
2 whole bay leaves
1 teaspoon dried thyme
2 tablespoons cornstarch
1 cup frozen peas
Fresh thyme sprigs for garnish


Instructions

Season the beef chuck pieces with the first 1/4 teaspoon of salt and pepper.
Heat olive oil in a skillet over medium-high heat and sear the beef pieces until browned on all sides.
Place the seared beef, onion, celery, potatoes, and carrots into the slow cooker.
In a small bowl, whisk together the gluten-free beef broth, 1/2 teaspoon salt, 1/2 teaspoon pepper, tomato paste, gluten-free Worcestershire sauce, minced garlic, dried thyme, and bay leaves.
Pour the broth mixture over the ingredients in the slow cooker.
Cover and cook on low for 7-8 hours or on high for 3-4 hours until the beef is tender.
In a small bowl, mix the cornstarch with a splash of water to create a slurry, then stir into the stew.
Stir in the frozen peas and cook for another 10-15 minutes until thickened.
Remove bay leaves and serve garnished with fresh thyme.


Notes

Keep the skins on the Yukon gold potatoes to retain extra texture and nutrients. Ensure your Worcestershire sauce is specifically labeled gluten-free as some brands contain malt vinegar derived from barley. Store leftovers in an airtight container in the refrigerator for up to 3 days.
