Ingredients
4 tbsp unsalted grass-fed butter
1/2 cup yellow onion, diced
2 cloves garlic, minced
1/4 cup gluten-free 1:1 all-purpose flour blend
2 cups low-sodium chicken or vegetable broth
2 cups half-and-half
1 cup shredded carrots
3 cups broccoli florets, chopped into bite-sized pieces
1.5 cups shredded sharp cheddar cheese
1/2 tsp paprika
1/2 tsp salt, adjusted to taste
1/4 tsp black pepper
Instructions
In a large pot, melt the butter over medium heat.
Add the diced onion and sauté until translucent, about 3-5 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Whisk in the gluten-free flour blend and cook for 1 minute to remove the raw flour taste.
