Description

Golden, crispy focaccia muffins infused with garlic, rosemary, and olive oil, featuring a light airy interior and deliciously crisp crust.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons instant yeast
  • 1 teaspoon salt
  • 3/4 cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon black pepper
  • Optional: grated Parmesan cheese
  • Optional: red pepper flakes
  • Optional: sun-dried tomatoes or olives

Instructions

1. In a large mixing bowl combine flour, yeast, and salt and stir to mix.

2. Gradually add warm water and olive oil, stirring until a shaggy dough forms.

3. Knead the dough on a lightly floured surface for 6–8 minutes until smooth and elastic.

4. Place the dough in a lightly oiled bowl, cover with a towel, and let it rise for 1 hour or until doubled in size.

5. Preheat the oven to 375°F and grease a 12-cup muffin tin with olive oil or nonstick spray.

6. Punch down the dough and divide it into 12 equal portions, rolling each portion into a ball.

7. Place each dough ball into the muffin cups, cover, and let rest for 20 minutes.

8. In a small bowl mix minced garlic, rosemary, olive oil, sea salt, and black pepper.

9. Press dimples into each dough ball with your fingers and spoon the garlic-rosemary mixture evenly over each one.

10. Bake for 20–25 minutes until golden brown and crisp.

11. Allow the muffins to cool slightly before removing from the pan and serve warm or at room temperature.


Notes

For extra crispiness drizzle a little additional olive oil on top before baking.

If using active dry yeast dissolve it in warm water and let it sit for 5 minutes before mixing with the flour.

Store-bought focaccia seasoning can be used as a convenient alternative to garlic and rosemary.
