Ingredients
1.5 pounds boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves minced garlic
1 teaspoon dried parsley
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup grated Parmesan cheese
1/4 cup chopped fresh parsley (for garnish)
12 skewers (metal or soaked wooden)
Instructions
Cut chicken into 1.5-inch cubes
In a bowl, mix olive oil, garlic, parsley, oregano, salt, and pepper
Marinate chicken for 30 minutes
Thread chicken onto skewers
Heat grill to medium-high (375°F)
Grill skewers 8-10 minutes, turning occasionally
Sprinkle Parmesan cheese over chicken in last 2 minutes of grilling
Garnish with fresh parsley before serving
Notes
Use metal skewers for easier flipping when grilling
Marinate up to 4 hours for more flavor
Add bell peppers or zucchini for a veggie version
