Description

A fresh summer salad featuring juicy grilled peaches, tender grilled chicken, crisp mixed greens, and tangy goat cheese tossed with balsamic vinaigrette. It’s a perfect balance of sweet, savory, and smoky flavors.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 ripe peaches, halved and pitted
  • 6 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup goat cheese or feta, crumbled
  • 1/4 cup balsamic vinaigrette
  • Olive oil for grilling
  • Salt to taste
  • Black pepper to taste
  • Optional: chopped walnuts or almonds for crunch

Instructions

1. Preheat the grill to medium-high heat.

2. Season the chicken breasts with salt and pepper and brush lightly with olive oil.

3. Grill the chicken for 6 to 7 minutes per side or until fully cooked. Remove from the grill and let rest before slicing.

4. Brush the peach halves lightly with olive oil and place cut-side down on the grill.

5. Grill the peaches for about 3 to 4 minutes until slightly charred and softened.

6. Slice the grilled chicken into strips.

7. In a large bowl, combine the mixed greens, sliced chicken, and grilled peaches.

8. Sprinkle with crumbled goat cheese or feta.

9. Drizzle with balsamic vinaigrette and gently toss or serve as is.

10. Top with optional nuts for extra crunch and serve immediately.


Notes

Choose ripe but firm peaches so they hold their shape on the grill.

Let the grilled chicken rest before slicing to keep it juicy.

Walnuts, almonds, or pecans add a nice crunch and extra flavor.

You can substitute grilled shrimp or salmon for the chicken for a seafood variation.
