Ingredients
1 tablespoon olive oil
1 pound ground turkey
1 medium yellow onion, finely diced
1 clove garlic, minced
1 pinch red pepper flakes
1/4 teaspoon coarse ground black pepper
1 teaspoon dried oregano
1/2 teaspoon dried basil
1 can (14.5 ounces) diced tomatoes, undrained
1 can (15.8 ounces) great northern beans, thoroughly rinsed and drained
8 ounces fresh baby spinach
3 cups low-sodium chicken broth
1/2 cup freshly grated Parmesan cheese, plus extra for garnish
Instructions
Heat olive oil in a large pot over medium-high heat.
Add the ground turkey, onion, and garlic, sautéing until the turkey is browned and the onion is translucent.
Stir in the red pepper flakes, black pepper, oregano, and basil, cooking for 1 minute until fragrant.
Pour in the undrained diced tomatoes and the chicken broth; bring the mixture to a gentle boil.
Add the rinsed white beans and reduce heat to a simmer for 5-7 minutes to allow flavors to meld.
Stir in the fresh spinach and cook until just wilted.
Remove from heat and stir in the grated Parmesan cheese before serving.
Notes
Feel free to swap the baby spinach for kale if preferred. You can also add other seasonal vegetables like diced carrots or zucchini for extra color and nutrition. Store leftovers in an airtight container for up to 3 days in the refrigerator.
