Enjoy a fresh take on a holiday favorite with this Healthy Mashed Sweet Potato Casserole topped with a pecan oat crumble. Creamy oat milk replaces excess butter for a lighter but equally satisfying dish—perfect for Thanksgiving or Christmas.
Ingredients
- 3 pounds (1.3kg) sweet potatoes, peeled and cut into 2-inch pieces
- ¼ cup unsweetened oat milk (or preferred milk of choice)
- 2 tablespoons butter (can use plant-based if needed)
- ¾ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- ¼ teaspoon ground cinnamon
- Topping:
- ½ cup (45g) rolled oats
- ¼ cup (28g) fine almond flour
- 2 tablespoons (30g) coconut sugar
- ⅓ cup (40g) chopped pecans
- ½ teaspoon kosher salt
- 1/8 teaspoon ground nutmeg
- ¼ cup (60ml) melted butter or liquid coconut oil
Instructions
1. Put the sweet potatoes in a large saucepan and cover with water. Bring to a boil and cook until very soft, about 20–25 minutes. Preheat the oven to 350°F (175°C).
2. Drain the sweet potatoes and return them to the pan or transfer to a large mixing bowl. Add oat milk, butter, salt, pepper, nutmeg, cloves, and cinnamon. Mash until smooth using a potato masher or immersion blender.
3. Scrape the sweet potato mixture into a 3-quart baking dish and smooth the top evenly.
4. In a medium bowl, combine the oats, almond flour, coconut sugar, chopped pecans, salt, and nutmeg. Stir in melted butter until mixture clumps together.
5. Sprinkle the pecan oat topping evenly over the mashed sweet potatoes.
6. Bake the casserole in the preheated oven for 25–30 minutes, or until the topping is crisp and golden brown.
Notes
Make ahead: Assemble the casserole and store covered in the refrigerator for up to 1 day before baking. Topping can be stored separately and added just before baking.
Storing leftovers: Keep any leftover casserole covered in the baking dish or transfer to airtight containers. Store in the fridge for up to 4 days.
To reheat: Microwave individual portions or reheat the entire baking dish in the oven until warmed through.
