Description

This nutrient-dense turkey chili is the ultimate family-friendly comfort meal. By blending frozen vegetables into a smooth, savory base, you create a velvety, protein-packed sauce that is incredibly healthy without any tedious chopping. Lean turkey, fire-roasted tomatoes, and a robust blend of hidden produce combine to create a deeply flavorful dish that satisfies even the pickiest eaters while fueling the body with essential vitamins and fiber.


Ingredients

1 tablespoon extra virgin olive oil
2 pounds 99% lean ground turkey
12 ounces vegetable broth (as a non-alcoholic substitute)
2 packets chili seasoning
28 ounces fire-roasted crushed tomatoes
2 cans chili beans in sauce
3 bay leaves
2–3 tablespoons lime juice or vinegar
4 cups chicken bone broth
12 ounces frozen onion and pepper mix
6 ounces frozen carrots
6 cloves garlic
6 ounces frozen chopped spinach


Instructions

Place the frozen onion and pepper mix, carrots, garlic, spinach, and 2 cups of the chicken bone broth into a high-speed blender and blend until completely smooth.
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground turkey to the pot and cook until browned, breaking it up with a spoon.
Stir in the chili seasoning until the meat is well coated.
Pour the blended vegetable mixture into the pot with the turkey.
Add the remaining 2 cups of bone broth, vegetable broth substitute, fire-roasted tomatoes, and chili beans with their sauce.
Add the bay leaves and stir everything to combine.
Bring the chili to a gentle boil, then reduce heat to low and simmer for at least 30-45 minutes to let flavors meld.
Remove the bay leaves, stir in the lime juice or vinegar as a finishing touch, and serve warm.


Notes

Using frozen vegetables makes this dish incredibly efficient and budget-friendly. The longer the chili simmers, the deeper the flavor develops. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
