Ingredients
4 boneless chicken breasts (6 oz each)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup honey BBQ sauce (no alcohol, halal-friendly)
1 lb peeled Russet potatoes, diced into 1-inch cubes
4 cloves garlic, minced
1/2 cup grated Parmesan cheese (or halal-friendly option)
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat oven to 400°F (200°C)
In a small bowl, mix garlic powder, onion powder, paprika, salt, and pepper
Coat chicken breasts evenly with the spice mix
Heat olive oil in an oven-safe skillet over medium heat until hot
Sear chicken for 2-3 minutes per side until lightly browned
Transfer skillet to the oven
Brush both sides of chicken with honey BBQ sauce and return to oven
Bake for 20-25 minutes, or until chicken is cooked through and glaze is caramelized
Meanwhile, in a medium pan over medium-high heat, toss diced potatoes with olive oil, minced garlic, salt, and pepper
Cook, stirring occasionally, for 10 minutes until starting to brown
Add Parmesan cheese and continue stirring until potatoes are golden and crispy
Serve chicken on a plate with seasoned parmesan potatoes alongside
Notes
For an alcohol-free honey BBQ sauce, use store-bought halal-friendly brands or make your own with honey, ketchup, apple cider vinegar, and spices.
For a vegan option, replace chicken with tofu or cauliflower and use vegan Parmesan.
