Description

These Honey Chipotle Chicken Rice Bowls are packed with smoky, sweet, and tangy flavor. Juicy chicken coated in a spicy honey chipotle sauce is served over rice with black beans, corn, tomatoes, avocado, and a bright lime dressing for a quick and satisfying meal.


Ingredients

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon chipotle peppers in adobo sauce, finely chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1/2 lime
  • 1 cup cooked white or brown rice (or cauliflower rice)
  • 1/2 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn (fresh, canned, or frozen)
  • 1/4 small red onion, finely diced
  • 1 small avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil (for dressing)
  • 1 tablespoon lime juice (for dressing)
  • 1/2 teaspoon honey (for dressing)
  • 1/2 teaspoon garlic powder (for dressing)
  • 1/4 teaspoon salt (for dressing)
  • 1/4 teaspoon black pepper (for dressing)

Instructions

1. In a small bowl, whisk together honey, chopped chipotle peppers, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice to make the sauce.

2. Heat olive oil in a large skillet over medium-high heat. Lightly season the chicken with salt and pepper.

3. Cook the chicken for 6–8 minutes per side, or until golden brown and cooked through to an internal temperature of 165°F.

4. Reduce heat slightly and drizzle the honey chipotle sauce over the chicken, turning to coat evenly. Cook for 1–2 more minutes until slightly thickened. Remove from heat and let rest for 5 minutes before slicing.

5. In serving bowls, layer rice, black beans, cherry tomatoes, corn, red onion, avocado slices, and chopped cilantro.

6. In a small bowl, whisk together olive oil, lime juice, honey, garlic powder, salt, and black pepper to make the optional lime dressing.

7. Drizzle dressing over the bowls, top with sliced honey chipotle chicken, and serve immediately.


Notes

For a low-carb option, substitute cauliflower rice for regular rice.

Adjust the spice level by increasing or decreasing the amount of chipotle peppers.

The chicken can be prepared ahead of time and stored in the refrigerator for meal prep.

For extra crunch, add tortilla strips or crushed tortilla chips on top before serving.
