Ingredients
4 boneless chicken breasts (or thighs)
1/4 cup honey
3 tablespoons lime juice
2 tablespoons soy sauce (low sodium)
2 cloves garlic (minced)
1 teaspoon ground ginger
1 teaspoon chili powder
2 tablespoons olive oil
1 cup diced ripe mango
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1 jalapeño (seeded and finely diced)

Instructions
In a bowl, whisk together honey, lime juice, soy sauce, garlic, ginger, chili powder, and olive oil to make marinade
Marinate chicken for 20-30 minutes in the refrigerator
Preheat grill to medium-high heat and cook chicken for 6-8 minutes per side until golden-brown and juices run clear
While chicken cooks, combine mango, red onion, cilantro, jalapeño, lime juice, and salt in a bowl for salsa
