Description

Juicy, pan-seared chicken glazed in a sweet and spicy hot honey sauce, served over fluffy rice with roasted vegetables and creamy toppings. This cozy, flavor-packed bowl is perfect for an easy and nourishing weeknight dinner.

For the Chicken:

  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

For the Hot Honey Sauce:

  • â…“ cup honey
  • 1–2 tablespoons hot sauce (adjust to your spice level)
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon crushed red pepper flakes (optional)

For the Bowls:

  • 2 cups cooked rice (white, brown, jasmine, or cauliflower rice)
  • 1 cup roasted broccoli
  • 1 cup roasted sweet potatoes or carrots
  • ½ avocado, sliced
  • ¼ cup pickled red onions (optional)
  • Greek yogurt or sour cream, for drizzling
  • Fresh cilantro or green onions, for garnish

Instructions

1. In a large skillet, heat olive oil over medium-high heat. Season the chicken with garlic powder, smoked paprika, onion powder, salt, and pepper. Sauté for 6–8 minutes until golden brown and fully cooked. Remove from heat and set aside.

2. In a small saucepan or skillet, combine honey, hot sauce, apple cider vinegar, and red pepper flakes. Heat over low until warmed and slightly thinned. Taste and adjust spice or sweetness as desired. Pour half over the cooked chicken and toss to coat, reserving the remaining sauce for serving.

3. Divide rice evenly among four bowls. Top with roasted vegetables and hot honey chicken.

4. Add avocado slices and pickled red onions. Drizzle with Greek yogurt or sour cream and spoon over reserved hot honey sauce.

5. Garnish with fresh cilantro or green onions and serve warm.


Notes

Roast vegetables ahead of time to make weeknight prep even faster.

For crispier chicken, try air-frying or broiling for 1–2 minutes at the end of cooking.

Extra hot honey sauce is delicious drizzled over roasted vegetables, tofu, or even pizza.
