Ingredients

2 tablespoons neutral cooking oil
1–1/2 lbs beef chuck, cut into 1-in chunks
Salt and pepper to taste
1 large yellow onion, finely chopped
2 tablespoons tomato paste
1 tablespoon light brown sugar
4 cloves garlic, minced
1 cup non-alcoholic dark malt beverage
1–1/2 cups beef broth
1 medium bay leaf
3 sprigs fresh thyme
1–1/2 lbs russet potatoes, peeled and cut into 1-in cubes
1 lb carrots, peeled and cut into 1-in chunks
2 tablespoons flour
Fresh parsley for garnish


Instructions

Set the Instant Pot to saute mode and heat the cooking oil.
Season the beef with salt and pepper, then brown the meat in batches until seared on all sides, removing it to a plate once done.
Add the onion to the pot, sauteing until soft, then stir in the garlic, tomato paste, and brown sugar for one minute.
Deglaze the pot with the non-alcoholic malt beverage, scraping up any browned bits from the bottom.
Return the beef to the pot, add beef broth, bay leaf, and thyme sprigs.
Secure the lid, set to high pressure for 35 minutes.
Perform a natural pressure release for 10 minutes before venting.
Stir in the potatoes and carrots, then pressure cook for an additional 5 minutes.
Quick release the pressure, stir in flour to thicken the sauce, and garnish with fresh parsley before serving.


Notes

You can substitute the non-alcoholic malt beverage with high-quality mushroom broth if preferred. Store leftovers in an airtight container in the refrigerator for up to 3 days.
