Ingredients
3 cups green cabbage, coarsely chopped
2.5 cups low-sodium vegetable broth
1 (14.5 ounce) can diced tomatoes (undrained)
3 medium carrots, chopped into rounds
3 stalks celery, chopped
1 small yellow onion, diced
2 cloves garlic, minced
1 tablespoon apple cider vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon dried thyme
Salt and black pepper to taste
Instructions
Place the chopped cabbage, carrots, celery, onion, and minced garlic into the Instant Pot insert.
Add the diced tomatoes with their juice, vegetable broth, and dried thyme.
Secure the lid and set the valve to the Sealing position.
Cook on high pressure for 5 minutes.
Allow for a natural pressure release for 10 minutes, followed by a quick release for any remaining pressure.
Stir in the apple cider vinegar and fresh lemon juice.
Season with salt and black pepper to taste before serving.
