2 tablespoons canola oil
1 cup onion, finely diced
4 tablespoons all-purpose flour
0.5 teaspoon freshly cracked black pepper
1.5 lbs beef chuck roast, cut into 1-inch cubes
3 teaspoons alcohol-free Worcestershire sauce
32 oz high-quality beef stock
3 large carrots, peeled and sliced
2 stalks celery, sliced
2 cups potatoes, peeled and cubed
1 teaspoon salt
1 teaspoon dried thyme


Instructions

In a large skillet, heat 1 tablespoon of canola oil over medium-high heat.
In a bowl, toss beef cubes with flour, salt, and pepper until well coated.
Brown the beef in the skillet in batches, adding more oil as needed, then transfer to the slow cooker.
Add the onion to the skillet and sauté for 3-5 minutes until softened, then add to the slow cooker.
Add carrots, celery, potatoes, and thyme to the slow cooker.
Pour in the beef stock and add the alcohol-free Worcestershire sauce.
Stir gently to combine all ingredients.
Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beef is fork-tender and vegetables are cooked through.


Notes

Ensure your Worcestershire sauce is certified alcohol-free as some brands contain vinegar derived from spirits. For a thicker stew, you can whisk a small amount of cornstarch with cold water and stir it in during the last 30 minutes of cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
