Description
A vibrant and refreshing corn salad made with sweet corn, crisp vegetables, fresh cilantro, and a bright lime dressing. Perfect for summer barbecues, picnics, or a quick healthy side dish.
Ingredients
- 2 cups fresh sweet corn kernels (about 3 medium ears)
- 1 cup red bell pepper, diced
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice, freshly squeezed
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
1. Shuck the corn and carefully cut the kernels off the cob using a sharp knife.
2. Dice the red bell pepper, cucumber, and finely chop the red onion.
3. In a large bowl combine the corn kernels, bell pepper, cucumber, red onion, and chopped cilantro.
4. In a separate small bowl whisk together the lime juice and olive oil.
5. Season the dressing with salt and pepper to taste.
6. Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
7. Cover and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
8. Stir lightly before serving and adjust seasoning if needed.
Notes
Fresh sweet corn provides the best flavor, but thawed frozen corn can also be used.
For extra heat add diced jalapeño or a pinch of chili flakes.
This salad can be made a few hours ahead and stored in the refrigerator.
Add avocado or crumbled feta cheese for a richer variation.
