Description

A bright and refreshing Mediterranean-inspired dish featuring tender roasted shrimp, lemony orzo, fresh herbs, and creamy feta cheese.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon extra-virgin olive oil (for shrimp)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • Zest of 1 lemon
  • 12 oz orzo pasta
  • 2 tablespoon extra-virgin olive oil (for orzo)
  • 3 tablespoon fresh lemon juice
  • 1 clove garlic, finely grated
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, roughly chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh dill, chopped
  • 4 oz feta cheese, crumbled
  • 2 tablespoon capers, rinsed and drained (optional)

Instructions

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, toss the shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest until evenly coated.

3. Spread the shrimp in a single layer on the baking sheet and roast for 8–10 minutes, until opaque and cooked through.

4. Bring a large pot of salted water to a boil. Cook the orzo according to package instructions until al dente. Drain and return to the pot.

5. While the orzo is still warm, stir in olive oil, lemon juice, garlic, and red pepper flakes. Mix thoroughly.

6. Fold in the cherry tomatoes, spinach, parsley, and dill, allowing the spinach to wilt slightly.

7. Gently mix in the crumbled feta cheese and capers if using.

8. Top with the roasted shrimp and serve warm or at room temperature with extra herbs and lemon wedges if desired.


Notes

Use the freshest lemon juice and herbs for the brightest flavor.

Avoid overcooking the shrimp to keep them tender and juicy.
