Description

A zesty medley of mandarin oranges, toasted walnuts, dried cranberries, and crumbled feta tossed in balsamic vinaigrette. This vibrant salad offers a refreshing balance of sweet, tangy, and savory notes. Perfect for quick lunches, light dinners, or elegant receptions.

Ingredients

Scale

6 cups baby arugula and spinach mix
1 can (15 oz) mandarin oranges, drained (reserve 2 tablespoons juice)
½ cup naturally sweetened dried cranberries
½ cup raw walnuts, coarsely chopped
½ cup crumbled feta cheese
½ cup balsamic vinaigrette
¼ cup extra virgin olive oil (optional)

Instructions

In a large bowl, combine arugula and spinach.
Evenly distribute 2 tablespoons reserved mandarin juice over the greens.
Add mandarin oranges, dried cranberries, and chopped walnuts.
Gently mix in feta cheese.
Top with balsamic vinaigrette, reserving extra for optional drizzling.
Toss just until ingredients are evenly coated and colors are vibrant.

Notes

Substitute feta with crumbled goat cheese for a tangier profile.
Replace dried cranberries with fresh blueberries for a seasonal twist.
Chill for 30 minutes before serving to enhance flavor integration.
