Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 large sweet potatoes, peeled and cubed
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried thyme
1/4 cup maple syrup
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 tablespoon olive oil
Mixed greens or quinoa for serving
Instructions
Preheat oven to 400°F (200°C)
Toss sweet potato cubes with 1 tablespoon olive oil, salt, pepper, garlic powder, and thyme on a baking sheet
Roast for 25–30 minutes until tender and golden brown
Meanwhile, cook chicken in a large skillet over medium-high heat until browned and nearly cooked through
Transfer skillet to oven and bake with sweet potatoes for 15 minutes until chicken is fully cooked
In a small bowl, whisk maple syrup, Dijon mustard, apple cider vinegar, and 1 tablespoon olive oil to make the dressing
To serve, spoon sweet potatoes and chicken over mixed greens or quinoa and drizzle with dressing
Notes
For extra flavor, add a dash of smoked paprika to the chicken seasoning
Use a dairy-free dressing for a vegan option
