Description

This one-pan Marry Me Chickpeas recipe puts a vegan twist on the viral comfort food classic. Creamy, garlicky, and packed with flavor, this indulgent 15-minute meal is perfect for busy weeknights.


Ingredients

  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup vegan cream
  • 2 cups baby spinach, sliced
  • 4–5 fresh basil leaves, chopped
  • Optional: 1/2 cup grated vegan parmesan cheese

Instructions

1. In a large sauté pan over low-medium heat, warm the olive oil. Add the garlic and cook for 1–2 minutes, stirring frequently, until fragrant.

2. Stir in the sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper. Cook for 1 minute.

3. Add the chickpeas, vegetable broth, tomato paste, vegan cream, and spinach. Stir well to combine.

4. Bring to a gentle simmer over medium heat and cook for about 5 minutes, until heated through and the spinach has wilted. Taste and adjust seasoning as needed.

5. Remove from heat and stir in the fresh basil and grated vegan parmesan, if using.

6. Serve immediately with crusty bread for dipping, or spoon over cooked rice, pasta, or a baked sweet potato.


Notes

For a variation, substitute the chickpeas with your favorite vegan chicken alternative or crispy baked tofu.

For the cream, use store-bought dairy-free creamer, full-fat coconut milk, unsweetened plant milk, or homemade cashew cream.

To make cashew cream: Pour 2–3 cups boiling water over 3/4 cup raw cashews and soak for 5 minutes to 1 hour. Drain and blend with 1 cup fresh water until smooth and creamy.

If using a thinner plant milk, mix 1 tablespoon cornstarch with 3 tablespoons water and stir into the simmering chickpeas to thicken the sauce.
