Description

Ingredients

2 cups cooked, shredded organic chicken breast
1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter
1 package (16 oz.) potato gnocchi
4 cloves garlic, minced
4 cups organic chicken stock
3 tablespoons organic all-purpose flour
1 1/2 tablespoons Tuscan Marry Me seasoning blend
1 teaspoon sea salt
5–6 organic sun-dried tomatoes, chopped
1 tablespoon organic tomato paste
2 bay leaves
1 1/2 cups organic heavy cream
3 tablespoons vegetable broth
1 tablespoon fresh lemon juice
1 cup chopped organic kale
1 cup freshly grated parmesan cheese


Instructions

In a large dutch oven over medium-high heat, combine the butter and olive oil.
Add the minced garlic and sauté until fragrant, about 1 minute.
Stir in the tomato paste and all-purpose flour, cooking for 1-2 minutes to eliminate the raw flour taste.
Slowly whisk in the chicken stock and vegetable broth to prevent lumps.
Add the bay leaves, Tuscan seasoning, salt, and sun-dried tomatoes.
Bring the mixture to a gentle boil, then stir in the potato gnocchi and shredded chicken.
Reduce heat to a simmer and cook until gnocchi are tender, about 5-7 minutes.
Stir in the heavy cream and chopped kale, heating until the kale wilts.
Remove from heat, stir in the lemon juice and parmesan cheese.
Discard bay leaves and serve warm.


Notes

Ensure all chicken is fully cooked before shredding. If the soup becomes too thick, add a small splash of extra chicken stock. Store leftovers in an airtight container for up to 3 days.
