A vibrant Mediterranean chicken stir fry packed with colorful vegetables, briny olives, tangy feta, and bright lemon flavor—perfect for a healthy and satisfying weeknight dinner.
Ingredients
- 1.5 lbs chicken breasts, boneless and skinless, cut into bite-sized pieces
- 3 tablespoons extra virgin olive oil, divided
- Salt and black pepper to taste
- 2 medium zucchini, sliced into half-moons
- 2 red bell peppers, diced into chunks
- 1 large red onion, sliced into strips
- 2 cups cherry tomatoes, halved
- 1 cup Kalamata olives, pitted and halved
- 4 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Juice of 1 lemon
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley (optional)
Instructions
1. Prepare all ingredients by chopping, slicing, and measuring before cooking.
2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook for 6–8 minutes until golden and cooked through. Remove and set aside.
3. In the same skillet, add remaining olive oil. Sauté red onion and garlic for about 2 minutes until fragrant.
4. Add zucchini, bell peppers, and cherry tomatoes. Cook for 4–5 minutes until vegetables are tender.
5. Return the cooked chicken to the skillet and toss with the vegetables. Stir in sun-dried tomatoes, oregano, basil, thyme, and additional seasoning if needed.
6. Squeeze fresh lemon juice over the mixture, then gently fold in olives and feta cheese.
7. Serve hot, garnished with fresh parsley if desired.

Swap chicken with tofu for a vegetarian version.
