A vibrant summer salad featuring ripe nectarines, crisp cucumber, fragrant basil, and tangy goat cheese. Tossed with a light vinaigrette, it’s a refreshing, nutrient-rich dish perfect for light lunches or elegant gatherings.

Ingredients

Scale

2 ripe nectarines, sliced
1 English cucumber, thinly sliced
1/2 cup crumbled goat cheese
1/4 cup fresh basil leaves, torn
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Salt and pepper to taste

Instructions

1. Slice nectarines and cucumber into thin, even pieces.
2. Toss basil leaves gently to maintain texture.
3. In a small bowl, whisk olive oil, balsamic vinegar, honey, salt, and pepper.
4. Combine nectarines, cucumber, and basil in a large salad bowl.
5. Sprinkle crumbled goat cheese over the top.
6. Drizzle vinaigrette over the salad before serving.

Notes

Use ripe nectarines for maximum flavor. Substitute feta cheese if needed. Store leftovers in the fridge for up to 24 hours.
