1/4 cup Kalamata olives, pitted
1/4 cup feta cheese, crumbled
2 pepperoncini peppers
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
1 garlic clove, minced
1/2 tablespoon lemon juice
1/8 teaspoon dried tarragon
1/8 teaspoon dried oregano
1/8 teaspoon dried parsley
Instructions
In a small bowl or jar, whisk together olive oil, apple cider vinegar, minced garlic, lemon juice, tarragon, oregano, and parsley until well combined.
In a large bowl, combine the chopped romaine, tomatoes, cucumber, and red onion.
Add the Kalamata olives, feta cheese, and pepperoncini pieces to the salad bowl.
Drizzle the prepared dressing over the salad just before serving.
Toss gently to coat and serve immediately.
Notes
For a heartier meal, add sliced grilled chicken breast on top. Store the dressing in an airtight container in the refrigerator for up to one week. Assemble the salad just before eating to ensure the romaine leaves stay crisp.
